The Olive Bar and Kitchen in Bandra has partnered with Veganuary, a non-profit organisation that encourages people worldwide to try going vegan for the month of January. The restaurant’s special Veganuary menu includes soups; salads like cold zucchini salad, pickled apricot salad, pickled apricots with avocado, iceberg lettuce and arugula garnished with pumpkin and sunflower seeds; and roasted carrot and pumpkin soup. There are appetisers such as quinoa cakes served on a bed of muhammara with candied walnuts, smashed avocado and five-seed crackers, and ratatouille tart, a flavour-packed tart with velvety tomato butter, crunchy purple yam and a hint of smoky barbecue rub. Main courses offer dishes like linguine cacio e pepe (linguine tossed with zucchini strands, garlic and olive oil); green pea and edamame risotto, a creamy red rice risotto with coconut cream, peas, asparagus and a drizzle of fragrant basil oil; and stuffed portobello mushroom filled with Millie’s vegan mozzarella and paired with quinoa pilaf, roasted carrot cream and topped with crispy truffle panko.
