With Harry Potter Return to Hogwarts being the talk of town, here's a recipe from French bistro Soufflé S&rsquoil Vous Plaît for butterbeer that will have you thinking of Christmas and the wizarding world.
(Serves 7-8 portions)
Pale Lager Beer 1.5L
Dried Allspice Berries 14gms
Star Anise 10gms
Egg yolk 5nos
Castor Sugar 185gms
In a saucepot over medium heat, combine the beer, ginger and spices and bring it
to a gentle boil. Then simmer it for 10 mins. Strain the beer mixture. Beat all the 5 egg yolks, adding sugar at regular intervals. Beat the mixture until thickened.Add the egg yolk mixture to the warm spiced beer and gently heat it. Gradually add the blocks of butter & allow them to melt. Remove from heat. Add Whisky/Cognac to the glass before serving. Garnish with grated nutmeg.
