Yet, beyond the festive cocktails and familiar bottles is the ingredient that makes it all possible: agave. For centuries, the succulent plant has defined the character of tequila, but today it is beginning to enjoy a moment of its own. Across global bars and tasting rooms, the conversation is gradually moving beyond tequila to the diversity, craftsmanship and flavour potential of agave itself.
