The Banyan Tree Cafe is set to host an exclusive pop-up this weekend featuring a specially curated menu created by Chef Delzad Avari, an alumnus of Le Cordon Bleu London, in collaboration with Head Chef Darius Madon. The menu will showcase a mix of vegetarian and non-vegetarian small plates, blending bold flavours with innovative techniques.

Highlights from the vegetarian selection include the “Fiery Cauliflower Taco,” which is smoked in a clay oven and served with avocado mousse and arbol salsa; and the “Spicy Miso Grilled Vegetable Bowl,” a fusion of grilled vegetables, pak choy and wakame in an umami-rich miso glaze.

On the non-vegetarian side, standouts include the “Thai Spiced Fried Chicken Sandwich” packed with bold Asian flavours, and the “Smoked Tenderloin with Morel and Beef Broth,” a luxurious umami experience. The menu also features globally inspired dishes such as the “Pastrami Bunwich” and “Caribbean Style Kingfish with Pineapple Chow.”
