A restaurant visit no longer necessarily ends at the table. Increasingly, dining spaces are concealing another experience within them—a cocktail bar tucked behind a door, hidden upstairs or even buried beneath the restaurant. What begins as dinner can quietly turn into drinks, music and a completely different atmosphere, without ever requiring you to leave the address.

From intimate cocktail dens that reveal themselves only after dark to underground bars with their own menus, moods and identities, these spaces are adding another layer to Delhi’s dining culture. The idea is simple but effective: why stop at one destination when a restaurant can lead you to another? Selva Maya At Selva

At Selva, a destination dedicated to Peruvian, Mexican, and Nikkei cuisine, the evening doesn’t quite end when dinner does. 

Tucked within the restaurant is Selva Maya, a cocktail den that reveals itself as guests move deeper into the space, transforming the dining experience into something altogether different after dark. Named after the great Mesoamerican rainforest, the bar has its own music, mood and menu, with the architecture shifting from the restaurant’s light-filled openness to a more intimate setting where curved ceilings, softer lighting and a sculptural circular bar take centre stage. 

Inspired by Mesoamerican mythology, the transition from Selva to Selva Maya draws from the ancient story of the Sun God transforming into the Jaguar as day turns to night. 

The drinks follow the same cross-cultural thread that runs through the restaurant, bringing together Mexican, Peruvian and Japanese influences through native South American fruits, Amazonian botanicals, cacao, peppers, herbs and spices.

The result is less a bar tucked inside a restaurant and more a second chapter of the same story.

Let's Kiss At Nadoo

Tucked beneath Nadoo, the South Indian restaurant in GK 3, Let’s Kiss is the kind of bar you might easily miss if you didn’t know it was there. The underground drinking space takes the idea of a cocktail bar and strips away one of its most familiar elements: the menu. 

Instead, Let’s Kiss operates as an omakase-style cocktail bar, where guests share their preferred spirit, flavours or mood with the bartender and allow the drink to be created around them. The experience makes the bartender as much a part of the evening as the cocktail itself, with each serve built using house-made preparations and a repertoire of cordials, bitters, tinctures, oils and butters. 

The food follows a pared-back approach, with a compact selection of bar bites designed to accompany the drinks rather than compete with them. From wild mushroom tartine and house-fried chips to hummus, salsa and grilled paneer and broccoli skewers, the offerings make Let’s Kiss an easy stop for a drink and a bite—or a more spontaneous late-night detour after dinner upstairs.

Cavity Under Barbet And Pals

Cavity, tucked beneath Barbet & Pals in GK II, takes the idea of a bar-within-a-bar a step further. Created by Barbet & Pals co-founders Jeet Rana and Chirag Pal with chef Amninder Sandhu, the intimate nine-seater is designed as a cocktail-led tasting experience rather than a conventional bar. Its first format is a nine-course journey where cocktails take centre stage and food follows their cues, built around India’s regional flavours and GI-tagged ingredients.

The menu brings ingredients such as Uttarakhand’s Malta, Assam’s Bhimkol banana, Tripura’s Queen pineapple and Sundarban honey into the drinks, while Sandhu’s plates echo their regional influences.

The experience is deliberately collaborative, with Rana, Pal and Sandhu guiding guests through each course from behind the chef’s table. More than simply an underground extension of Barbet & Pals, Cavity gives the founders a smaller, more experimental space to explore the relationship between cocktails, cuisine and India’s diverse culinary landscape.

Loco's Den Above Café Loco

Located right above Café Loco, Loco’s Den is a neighbourhood bar built around the idea of drinking differently at different hours of the day. Its all-day cocktail programme is divided into three moods—Breakfast Buzz, Lunch Flow and Dinner Glow—with 18 cocktails that move from refreshing and easy-going to bolder, spirit-forward serves as the day progresses. T

The morning menu pairs drinks such as Soul’s First Sip, made with dark rum, cold brew and coconut, with classics including the Espresso Martini and Mimosa, while the afternoon brings cocktails such as Community Table, with gin, cucumber and elderflower, and Vinyl Spritz, a tequila and hibiscus spritz. Come evening, signatures such as After Hours with Luna and Midnight Loco sit alongside the Old Fashioned, Negroni and Margarita.

The drinks are accompanied by globally inspired comfort food and indulgent bar bites, while the space doubles as a social hub with live screenings of sporting events, karaoke nights, pub quizzes, movie screenings, guest DJ sessions and community-led events. The result is a bar designed to evolve with the day, offering a different reason to drop in whether it is morning, afternoon or late evening.
