Ingredients:

• 2 cups all-purpose flour

• 1/4 cup vegetable oil

• 1/2 teaspoon salt

• 2 cups boiled and mashed potatoes

• 1 cup boiled peas

• 1 tablespoon vegetable oil

• 1 teaspoon cumin seeds

• 1 teaspoon mustard seeds

• 1/2 teaspoon turmeric powder

• 1 teaspoon garam masala

• Salt to taste

• Oil for frying

Instructions:

1. In a mixing bowl, combine the flour, salt, and vegetable oil. Gradually add water to make a firm dough. Cover and let it rest for 30 minutes.

2. Heat 1 tablespoon of oil in a pan. Add cumin seeds and mustard seeds. Once they start spluttering, add turmeric powder, garam masala, and salt.

3. Add the mashed potatoes and boiled peas to the spice mixture. Mix well and cook for a few minutes. Remove from heat and let it cool.

4. Divide the dough into small, equal-sized balls. Roll each ball into a thin oval or circle.

5. Cut each oval in half to create two semi-circles. Fold each semi-circle into a cone shape, sealing the edges with a little water.

7. Heat oil for frying in a deep pan. Fry the samosas until they are golden brown and crisp.
