Good news has been few and far between in these times of pandemic crisis. But here is something drool-worthy, if you are a home chef or a passionate foodie who loves to whip up a new recipe ever now and then. There is a brand new cookbook series from The UTSA Libraries (part of US-based University of Texas San Antonio) which contains recipes from its Mexican Cookbook Collection. Called the &lsquoRecetas Cocinando en los Tiempos de Coronavirus&rsquo or &lsquoCooking in the Time of the Coronavirus&rsquo, the e-book series is not only a list of recipes but also a lesson in food history, with some of the recipes going back a few centuries.

The first e-book published under the series is &lsquoPostres Guardando Lo Mejor Para el Principio&rsquo, or &lsquoDesserts Saving the Best for First&rsquo, which can be downloaded free. It includes churros, rice pudding, chestnut flan and bu&ntildeuelos among others.

According to UTSA Today, UTSA&rsquos Mexican Cookbook Collection includes more than 2,000 titles in English and Spanish, documenting the variety and history of Mexican cuisine from 1789 to the present, with most books dating from 1940 to 2000. Dean Hendrix, the Dean of Libraries at UTSA and Amy Rushing,

 

Assistant Dean for Special Collections, has been collecting these books for several years. According to reports, they were in the middle of digitising the entire collection when the pandemic halted the work. Realising that the pandemic has unleashed the home chef in many and people are looking for new recipes to try, they decided to take their work online.

Next in line is one e-pub on Main Courses and another on Appetizers and Drinks.
