The Bukhara at the ITC Maurya, widely considered India's hottest plate, is celebrating adventurously, with a gamble &mdash or three.

The 35-year-old Frontier kitchen has not needed to update its menu since its inception, but it is making bold at last to cross that dangerous border between known crowd-pleasers and undiscovered hopefuls. The foray includes preparations based around seasonal vegetables and perhaps fish.

From August 2 to 11, lucky patrons get a glass of champagne gratis at 830pm and 1030pm daily, a freebie portion of the eponymous Dal Bukhara and a chance to enjoy a complimentary meal at the chef's winning table. Maybe one of those red or green gingham get-down-and-messy aprons they are so well known for.

And if none of this works out for you, at least you have the honour of sampling dishes that have been bestsellers for 35 years straight.
