Delhi’s culinary scene got a taste of coastal nostalgia on March 28, as Hyatt Regency Delhi’s "Syrah" hosted an exclusive pop-up featuring celebrated Goan chef Avinash Martins. The event, curated in collaboration with Blue Label, brought a flavourful journey through Goa’s rich culinary heritage, offering a nicely curated media table that redefined the traditional Goan food experience.

Speaking to Outlook Traveller, Martins shared, "The pop-up is a tribute to the diverse food heritage of Goa, with delicacies inspired by the state's Portuguese roots reflecting in the six-course menu and complemented by taste-enhancing cocktails."

The presentation, indeed, was a stand-out feature of the gastronomic gala. "Plating has to have an appealing first impression. Diners should be able to discover Goa in every bite—an opportunity they may not find elsewhere."

Martins, known for his ingredient-driven approach and deep-rooted connection to Goa’s artisans and local communities, presented a well-thought menu centering around his childhood and granny's recipes. The evening was a sensory delight, transporting guests to the shores of Goa with each bite, from the tender coconut to the cheese-filled local pao (bread).

The menu featured a reimagined take on classic Goan dishes, showcasing locally inspired flavours beyond the usual staples. Signature dishes included:

Goa’s Crowning Jewel: A refreshing Tender Coconut Carpaccio, paired with Sol Kadhi, Aam Rass, and Leche de Tigre, plating the tropical essence of Goa.

South Side Xacutti: A modernised version of the beloved Xacutti, available in two variations: Roasted King Trumpet & Shimeji Mushrooms with Kopra & Edamame Kismur, and Arroz Refogado or Herb-Crusted Lamb Chops.

Pao Story: A tribute to Goa’s iconic bread, featuring Pao de Queso, Dungar Eggplant, and Kalchi Kodi, the quintessential leftover curry given a sustainable twist.

Tender Coconut Karpacho: A nostalgic dish inspired by Chef Martins’ childhood memories, bringing a delicate balance of coconut and coastal flavours.

Guests were treated to a delightful beverage experience to complement the refined flavours. Signature tequila and gin-based cocktails played with citrusy and tropical notes, while whiskey-based concoctions accompanied the earthy, spiced flavours of the main courses.
