In the quaint village of Assagao, once overshadowed by the hustle and bustle of Goa's tourist magnets, a subtle revolution is unfolding. No longer confined to just foreign visitors, the place is slowly emerging as the new hotspot with the energy of young adults in search of unique and offbeat experiences. This newfound popularity, however, is anything but surprising because the once-overlooked gem has transformed into a destination boasting trendy cafes, unique restaurants, and hidden speakeasies.

Many of these contemporary hangouts, located against the backdrop of swaying palm trees and charming Portuguese-style bungalows, are a testimony to Goa's rich cultural heritage. The fusion of tradition and modernity creates an inviting atmosphere that attracts locals and tourists.

Assagao's culinary scene has recently witnessed the emergence of several remarkable dining establishments, but the spotlight shines brightest on the newly-opened Bawri restaurant. This gastronomic gem pays tribute to traditional Indian cuisine, skillfully blended with a modern twist. Chef Amninder Sandhu has curated its menu, showcasing a tapestry of heirloom recipes, long-lost techniques, and bold, complex flavours that masterfully draw from locally sourced ingredients.

"When we began conceptualising Bawri, we were extremely certain that it would have two key ingredients- traditions that you rarely see anymore and warmth that you would know when you went over to your grandmother's or relatives' place after a long time. We're trying to make you fall in love with Indian tradition and culture while not just evoking but also creating memories," said Sandhu.

She further stated that the menu at Bawri has been mindfully crafted with recipes from her family and friends, who had graciously passed them down to her. "You will find yourselves moved by our passion for nurturing you through this meal made with pure ghee from grass-fed cows, cold-pressed coconut oil and olive oil, poultry free from antibiotics, and spices sourced from their regions of origin."

From the beautifully amalgamated bheja masala paired with Manipuri black rice dosa to smoked mutton chops infused with rose smoke, Kakori kebabs accompanied by a traditionally ground silbatta chutney, to the Kerala-style tiger prawns paired with Goan-style Fermented Rechado Butter—at Bawri, every dish is an experience of the artful fusion of flavours.

Bawri offers a delightful dining experience, not only for your taste buds but also for your eyes. The decor is a perfect blend of coastal cottage charm and rustic allure. The restaurant's warm and inviting ambience is created by bamboo and pottery craftsmanship inspired by local Goan artisans. Floating cabanas by the Koi pond cleverly separate the restaurant's two ventures, Bawri and VietNom, adding a touch of magic to the atmosphere.
